Fettucine Alfredo

1/2 cup butter
2 TBS Cream Cheese
1 pint Heavy Cream
1 tsp garlic powder
salt & pepper
2/3 c. grated parmesean cheese
1 lb fettucine

Melt butter in saucer, add cream cheese. Then add heavy cream. Next, add garlic, salt, and pepper. Simmer 15-20 minutes, stirring constantly. Remove and add parmesean cheese. Pour over noodles.
YUM

*May or may not be Olive Garden Recipe....but either way...it is delicious!

Morning Glory Muffins

2 cups wheat flour
1 1/4 cups sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
3 eggs
1 cup applesauce
2 tsp vanilla
2 cups grated carrots
1 grated apple
1/2 bag of Chocolate chips

Mix all dry ingredients together, then stir in fruit (and nuts if you like).
Mix eggs, apple sauce , and vanilla together; stir into dry ingredients. Add chocolate chips last.
Mix until well blended.

Fill muffin cups to the top or a little under. Bake at 350 for 15-20 minutes until toothpick comes out clean.

*You can do white flour, or 1/2 wheat 1/2 white. Also I use applesauce, but the recipe is for oil. You can also put in raisins, coconut, nuts, etc...whatever you would like. This is the recipe I use and we love them! Esp. after they get cold in the refrigerator. They are yummy, healthy muffins that taste like chocolate chip muffins! My favorite muffins by a long shot!


Apple Cinnamon Baked Oatmeal

6 cups of Oatmeal
1 1/2 cups of brown sugar
1 cup of applesauce
2 cups of milk
4 beaten eggs
1 tsp vanilla
1 tbs baking powder
1 tsp salt
2 tsp Cinnamon (or more if you desire)
1 large apple, cut up into little squares

Mix all ingredients together and pour into a greased 9x13 baking pan. Bake at 350 for 20 minutes or until center comes out clean.

* I also sprinkle cinnamon and brown sugar on the very top before I put it in the oven.
*You can make a basic oatmeal and add other fruit by omitting the cinnamon and apples.
*We like it warm...but in the refrigerator and cold the next day is the yummiest! We usually eat some warm, then enjoy the leftovers cold for as long as it lasts...which usually isn't too long. :)

Creamy Chicken Enchiladas

2 chicken breasts, cooked & chopped
1 Large can cream of chicken ( I use to 2 small FF Cream of Chicken for Low Fat)
8 oz Sour Cream ( I used FF Sour Cream)
 sm. can of diced green chiles
2 cups shredded cheese
10 flour tortillas

Mix Cream of Chicken, Sour cream, and green chiles in a bowl. Spread a little in the bottom of pan so tortillas won't stick. Take one tortillas and spread a little sauce on the inside. Add Chicken. Roll up and place seem side down in the pan. When all 10 tortillas have been put in the pan...take remaining sauce and cover all tortillas. Then cover with cheese. Bake at 350 for 25 minutes.

*Delicious served with salsa on top.

Chicken, Bacon, & Avocado Quesedillas


                                                       So simple, and yet so delicious!!!!

Tortillas
Colby Jack Shredded Cheese (or whatever cheese you like)
Bacon ( Used turkey bacon)
Cut up Avacados (into chunks)
Chicken breast, cooked & chopped

Put all ingredients between two tortillas and brown on the stove top until golden crispy.

*Beware...entirely too good.
** Afterwards I had the thought that a little ranch on the inside would have been divine...or for dipping sauce!

Lion House Chicken Noodle Soup

(sorry the pics aren't great...I should take them with a camera instead of my phone!)


2 cooked/ chopped chicken breasts
2 cups carrots
2 cups celery
2 cups onion
1 pkg egg noodles
4 cups of chicken broth
2-3 cans of cream of chicken
1 cup of milk
Salt and pepper

Boil chopped veggies in chicken broth until tender. Add cooked chicken and cooked pasta. Add cream of chicken and milk. (If need more: Cream of chicken to thicken…milk to thin)

 * I use less celery and onions to my liking. And usually 1/2 a bag of noodles will be plenty for one pot.
